Hello Summer Salsas

It's warming up outside, and it's time to cool down with your favorite summer dishes and these fiery salsas. Find many of these ingredients at your favorite farmers market or CSA (community supported agriculture), or do a quick search on Good Food Finder.

Roasted Tomatillo Salsa

Ingredients

1 pound roma tomatoes, halvedChipotle-Tomatillo_Salsa-2 1 pound tomatillos, hulled and rinsed, halved ½ yellow onion, quartered 3 cloves garlic, smashed and peeled 2 chipotle chiles in adobo ¼ c cider vinegar 3 green onions, minced 3 tbs cilantro, minced Salt and pepper to taste

Directions

  1. Preheat oven broiler. Place tomatoes, tomatillos, onion, and garlic spread out in one layer on a large baking sheet. Broil about five minutes until tomatoes and tomatillos are beginning to char. Remove from broiler and let cool slightly.
  2. Add all ingredients to a blender or food processor. Pulse until mostly blended but still a little chunky.
  3. Add salsa to a large bowl and season with salt and pepper.
  4. Stir to combine and taste to adjust seasoning.
  5. Let cool completely before serving.

Black Bean and Corn Salsa

Ingredients

2 c fresh corn kernels, cut from 4 ears of cornBlack Bean and Corn Salsa1 2 c cooked black beans, or 1 can, rinsed and drained 1 avocado, diced 1 or more jalapeno or serrano chiles, seeded (optional) and minced 2 tbs fresh cilantro, minced Juice of 1 lime Salt and pepper to taste

Directions

  1. Remove corn kernels from cob by standing it on a cutting board and working a sharp down the sides. Rinse and drain beans.
  2. Add corn, beans, avocado, chile, and cilantro to a large bowl.
  3. Squeeze the lime juice over and season with salt and pepper.
  4. Stir to combine and taste to adjust seasoning.

Confetti Salsa

Ingredients

½ c cucumber, finely dicedDSC_0062 ½ c red bell pepper, seeded and finely diced ¼ c red onion, finely diced 1 avocado, diced 1 or more jalapeno or serrano chiles, seeded (optional) and minced 1 c cherry tomatoes, quartered 1 clove garlic, minced Juice of 1 lime Salt and pepper to taste

Directions

  1. Add cucumber, bell pepper, onion, avocado, jalapeno, and tomatoes to a large bowl.
  2. Squeeze the lime juice over and season with salt and pepper.
  3. Stir to combine and taste to adjust seasoning.
