This is a northern Arizona member spotlight for Brix Restaurant and Wine Bar in Flagstaff Part of SLO (Sustainable Local Organic) Restaurant Concepts, Brix Restaurant & Wine Bar opened in Flagstaff's historic Carriage House during the spring of 2006 under the leadership of Paul and Laura Moir. Local, regional, national and worldwide acclaim soon followed. Brix serves seasonal, farm focused and contemporary cuisine.
It was the frontrunner in leading the local food movement ahead in Flagstaff's restaurant scene. Named to many "best of" lists, Brix has been featured in Conde Naste Traveler, Phoenix Magazine, and in Sunset Magazine as Flagstaff's "best restaurant." Brix prepares fresh ingredients sourced from local farmers and ranchers in northern Arizona and in the Four Corners region.
Seasonally, the menu changes at Brix. During the winter you can find winter greens and roasted winter veggies, paired with local wines and locally brewed beers. Throughout the year, Brix also hosts different events that focus on bringing attention to the region and the season's fruits and vegetables, local meats and food heritage. Brix, as a SLO concept, is also committed to sustainability and conservation in all that it does. Here are just a few of their regular practices, and a map of its foodshed (or, where it sources much of what they prepare for the menu):
- Locally farmed, sustainable, local and organic food sourced from partners throughout Arizona and the Four Corners region.
- Reverse osmosis water used for drinking water.
- Recycling. All of their glass and paper waste is recycled. They also purchase recycled packaging materials.
- Compost. All of their organic waste is fed into local composting operations.
- Frying Oil. They use 100% rice bran oil for all of our frying.
